Thyme honey is the most common type of honey on Kos. It is the most aromatic honey in Greece. It is collected at the end of August. It is very nutritious, invigorating and rich in trace minerals with antiseptic properties and can act as a cardiotonic. It crystallizes in 6-8 months.

Pine honey is the most widely produced honey in Greece. It has antiseptic action and acts against cough and throat diseases. It crystallizes very slowly.

Crystallization of honey

Crystallization is a natural process of honey. Over time and changes in temperature cause the pollen present in honey to coalesce and subsequently crystallise honey. To bring it back into liquid form, put the honey in a bain marie at a low temperature, up to 40 degrees.
